And finally I return! Warned you the updates might be far and few in between ;P The other night I concocted something that really made my taste buds really happy and was really fast and easy to make so I thought it seemed share worthy. I really don't know what to call it so here goes...
         

                                No Words Panini 

1 egg
1 TBSP coconut flour
1 TBSP Parmesan cheese (optional)
2 TBSP cream
pinch of salt 
a sprinkle of Italian seasoning 

      Stir together above ingredients until there are no more lumps. Let sit on the counter for a few minutes (the batter will get fluffier) while you melt a generous amount of butter in a pan and in another pan start sauteing a huge handful of spinach and chopped up sun dried tomatoes. Pour two sandwich sized pancakes into your pan as if you were making pancakes basically and fry just under medium heat till side 1 one is nice and toasty brown, flip and put a nice layer of mozzarella cheese on one of your cakes and top with your sauteed spinach and sun dried tomatoes. When sides 2 are done create your sandwich and you are all set! Sounds simple but trust me it's delightful!!
       you could make many variations of this. Chicken breasts would be ideal on this combo but I didn't have any thawed out. Sausage and eggs would probably go well with this too! You could even make dessert variations by frying them in coconut oil instead of the butter and fill with cream cheese and blueberries or apples sauteed in cinnamon, butter and sweetener!

            Hello again! :) Tonight's little secret about me is that I am addicted to the Applebee's (my place of employment) pecan crusted chicken salad and while I'm sure there's things on the menu that are much more unhealthy I have a feeling there are ingredients in it that I wouldn't feel to good about if I knew about them. So my hunger tonight after some rough raking in our disastrous yard and the desire to find a solution to my addiction created an inspiration to make a wonderful salad that I will be making so many more times in the future. I'm so excited that it turned out this fabulous on my first try and it's a double good thing that it was super satisfying to my taste buds because had I not had the wonderful aroma of the pecan crusted chicken frying in coconut oil wafting through my kitchen it would have been oh so much harder to resist those amazing 'red lobster biscuits' I made for my hubby dear but we wont talk about those because this salad I'm about to tell you how to create is better and much better for you! :) I'm learning that I'm really going to have to be more of a 'measuring cook' instead of a 'dump sprinkle and splash cook' if I want to keep creating recipes and sharing them :/ So I apologies in advance to those of you that like precise measurements, I promise I will try and do better in the future and as for now if you have any questions on anything or would like a more precise recipe on something don't be scared to message me about it and next time I make it I will measure and get you something more precise of whatever you want :) So here goes!

                                  Nita's Pecan Crusted Chicken Salad

chicken-
1 boneless skinless chicken breast
1 handful pecans-crushed pretty fine. I used my pamper chef chopper, blender would work too
1 tsp cinnamon 
1 TBSP homemade brown sugar (1 cup xylitol mixed with 1 TBSP molasses) 
or brown sugar to those of you not on THM or sugar cautious  
2 TBSP flour of your choice 
almond milk -or milk of your choice, I used almond
coconut oil

Mix all thee above ingredients except almond milk and coconut oil together in a pie pan. Dip your chicken in almond milk (I let mine soak in it for about 10 mins while I got my coconut oil heating in my pan which I think is a good idea but don't know if it makes a significant difference) and then toss your chicken around in your pecan mixture. Once you have it well covered put it in your skillet with a generous amount of coconut oil and fry on a fairly low heat until cooked thrue, be careful not to get your heat to high or your crusting will burn before the center of your chicken is done. 

Dressing-
one part balsamic vinegar
one part olive oil 
homemade brown sugar to taste (1 cup xylitol mixed with 1 TBSP molasses) 
or brown sugar to those of you not on THM or sugar cautious 

         For my salad I cut a nice big bed of romaine lettuce topped it with some red peppers and feta cheese and drizzled it all with a generous amount of the dressing and then last but certainly not least plopped my sliced yummy smelling chicken on the very top. That is what I used because that's what I happened to have on hand but I think white cheddar cheese in place of the feta would be yummy as well as some mandarin oranges and/or dried cranberries and well whatever your little heart desires :) be creative and enjoy! I think it tasted simply Divine! :)

Hey hey my friends! Welcome to my blog! I am 100% new to this and don't have a whole lot of free time so bare with me in the days to come as I give this a shot! Today is such a lazy rainy day! Me and the hubbs went to church this morning and heard a very inspiring sermon! Afterwards we went to a yummy chines place with some lovely friends and I ate entirely too much! 'sigh' So to make up for it I'm going to try and have a no-cheat Trim Healthy Mama week which will be my first week of doing so if I succeed :) So to help myself keep from cheating I decided to do some healthy baking and chocolate making but to my saddness I only had enough sweetener (xylitol and truvia) left to make a small batch of yummy chocolate. So I did a little experimenting and this is what my concoction ended up being...

1/2 bar 100% cacao chocolate
a few splashed of heavy whipping cream
1 TBSP butter
melt together in the microwave and mix well then add
a mixture of the sweeteners to taste (I ground them to a fine powder first in my coffee grinder)
a splash of vanilla
and a generous handful of almonds

yummy yummmyy it is! And beings I couldnt do any baking I made myself a delicious hot drink with layers of espresso-steamed heavy whipping cream-caramel syrup to sip on while I finally am getting to designing this blog after some time of procrastinate. My hubby (Nate) says you can't spell procrastinate without 'nate' so I'll blame it on him that it's taken so long! haha

So tomorrow I want to stop and pick up some sweeteners and then give some new healthy sugar free brownies and peanut butter eggs a shot sometime later this week when I find the time and I will try and post about how those go including recipes and pictures. I have yet to figure out how to post pictures but I'm guessing that won't be to complicated :)
